These Homemade Chicken Mashed Potato Bowls, aka KFC Bowls, are so easy to make! I don’t understand how I had never made these before at home. This is one of those dinners that everyone ate without whining and went back for seconds.

Now I have worked for KFC for years and I worked there when the KFC Mashed Potato bowl came out. I remember back then making so many for drive-thru orders, and now my daughter who works for KFC sells them all the time.

However, as a mom buying them it didn’t seem cost-effective and oh it’s a pain to order one with no gravy, one with no chicken, and one with no corn. Knowing how easy they are to make, I am kicking myself in the pants for not making them at home! Live and learn right?

Homemade Chicken Mashed Potato Bowls Recipe Directions:

Line a cookie sheet with tin foil or use a baking stone to layout your chicken on. I love Perdue Farms they have popcorn chicken that you can order -> here! If you don’t have that you can cut up chicken tenders (that’s what I had on hand or even make chicken tenders! (see my recipe -> here).

Peel your potatoes and cube them up to be boiled into mashed potatoes. I used gold potatoes to make our bowls but you can use any type of potato.

This basically follows Garlic Mashed Potatoes which you can make the day before to make the recipe faster on a weeknight

Start a pot of water to boil for the potatoes.

Once your water is at a boil add in the potatoes and preheat your oven according to your chicken directions.

Allow the potatoes to boil until they are ready to be mashed down, normally you can slice one easily with a fork.

Use a strainer to strain the water off of the potatoes.

In a mixing bowl, I used my Kitchen-Aid Mixer to make the mashed potatoes. Add into your mixing bowl your cream cheese, butter, and minced garlic into the bowl with the potatoes.

Slowly add in the milk to get the potatoes to the consistency that you want.

Mix on low until well mixed and the consistency you want.

Cook up your brown gravy, I buy the big container at Costco of brown gravy but Amazon has it -> here as well. You can also use jarred gravy, this would work great in a time pinch.

Now if you don’t have a silicone whisk set you need to get one! They won’t bang up or scratch your nonstick pans at all and do a great job mixing the gravy. You can order them on Amazon -> here.

Also, cook your corn so that once everything is done you are ready to assemble your bowls.

I set mine up in an assembly line so everyone could make theirs as they see fit!

I layer mine with potatoes, corn, chicken, gravy, and then cheese.
