Ingredients

Peanut Sauce

  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 2 tablespoons oyster sauce
  • 1 ½ tablespoons chili garlic sauce
  • 1 tablespoon ground ginger
  • 1 tablespoon honey
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • Juice of 1 lime

Lettuce Wraps

  • 8 Boneless Skinless Chicken Thighs cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 4 green onions sliced
  • ½ cup shredded carrots
  • ½ cup chopped peanuts
  • ½ cup chopped cilantro + extra for garnish
  • 12 baby butter lettuce leaves
  • 6 lime wedges

Instructions

To make the Peanut Sauce:

  • Stir all ingredients in a bowl. Use ⅓ cup of it for marinating and set the rest aside.

To make the chicken:

  • 1. Place the cut chicken in a small bowl and ⅓ cup peanut sauce. Stir well to coat. Cover and refrigerate for 30 minutes-2 hours.

  • 2. Heat oil in large skillet over medium heat and add marinated chicken. Sauté for 5-7 minutes, stirring to turn the chicken pieces.

  • 3. Add carrots and green onions and cook for an additional 5 minutes or until chicken iscooked through. Add peanuts and cilantro and remove from heat.

To serve:

  • Spoon into lettuce cups and serve immediately with extra peanut sauce, lime wedges and cilantro.

    So good!!! The sauce is everything. Used what I had in the house which was chicken breasts, cashews instead of peanuts. I also only used 3/4 Tbsp of Chili sauce (don’t like a lot of heat) and added red & yellow peppers and edamame. Mmmmmm…I admit I ate more than my share LOL. I also didn’t have time to marinate as this was a last minute choice, but still delicious.
