This keto ham and broccoli casserole is an easy and delicious recipe to make with leftover ham. Only 5 ingredients needed to make this cheesy low carb casserole and each serving has 5.1g net carbs.

Lately I have been craving casseroles. My mom never really made casseroles growing up but I find they are easy, tasty and pure comfort food. Since there are such great deals on hams right now, I made one for a family Sunday dinner and of course had leftovers.

I decided to make this keto ham and broccoli casserole! I had some for lunch and then froze the leftovers for more low carb lunches next week. It has that cheesy broccoli casserole flavor that goes great with salty ham. YUM!

Andif you didn’t care about carbs you could mix cooked white rice in with the broccoli and ham to make a complete meal. So if you have aleftover of all of these simpleingredients this would be a super easy casserole with leftovers!

Casserole recipe ingredients I used.

There are only 5 ingredients in this cheesy casserole: ham, fresh broccoli florets, sharp cheddar cheese, fresh cauliflower florets and full fat cream cheese. The cauliflower along with the cheeseis used to make a cream sauce.

Originally when I made this I used frozen broccoli but when I remade it today I think it’s better with both fresh broccoli and cauliflower. You could also use leftover already cooked broccoli if you want.

Frozen veggies sometimes have a lot of water and that might add excess water to the dish. So if you do use frozen broccoli, make sure you get all of the water out after you cook it.

Let’s make this keto ham and broccoli casserole.

  1. Preheat the oven to 400°F. Prepare a baking dish by spraying it with nonstick cooking spray and set aside.
  2. Chop and steam both the broccoli and cauliflower florets separately. I love to use my microwave steamer to do it in the microwave. You can do this any way you wish just make sure to strain off any excess liquid.
  3. Chop the ham into small bite sized pieces and mix it with the cooked broccoli in the baking dish.
  4. Add the cooked cauliflower, cream cheese and half of the shredded cheddar cheese to a high speed blender or food processor and blend until nice and creamy. It should be the consistency of a thick cheese sauce. You are going to use this as your creamy cheese sauce so if you want it thinner you can add a tablespoon or 2 to thin it out.
  5. Mix the cream sauce mixture with the broccoli and ham in the baking dish then top that mixture with the remaining shredded cheese. You can seasoning with salt and black pepper if you want but I didn’t think it needed as the ham and cheese sometimes add enough salt.
  6. Place the baking dish in the preheated oven and bake for 15-20 minutes until nice and golden brown on top. Let cool before eating. (Please scroll down to see the printable recipe card.)

Store leftover in an airtight container and place in the refrigerator or freezer. I like to use leftovers like this for a quick microwave keto lunch.

You could also freeze the whole casserole if you want. I’ve never tried it but I don’t’ see why it wouldn’t work.

This recipe made 4 servings for me but if you want you could add more broccoli or ham though remember the carbs count will change.

You can also add some cauliflower rice, mushrooms, etc and play around with different cheeses like Monterey Jack, mozzarella cheese, Swiss cheese etc.

This low carb broccoli ham casserole is an easy and delicious recipe to make with leftover ham, especially for a busy weeknight dinner. Only 5 ingredients needed to make this tasty low carb casserole and each serving has 5.1g net carbs.

Ingredients

  • 8 oz ham, cooked and diced
  • 2 cups broccoli, chopped and steamed
  • 2 cup cauliflower, chopped and steamed
  • 1 oz cream cheese
  • 1 ¼ cup cheddar (divided into ½c and ¾c)

Instructions

  1. Preheat oven to 400 degrees F. Prepare a baking or casserole dish by spraying with nonstick cooking spray.
  2. Chop and steam both the broccoli and cauliflower separately. You can do this anyway you wish. I like to use microwave steamer pot. But you can do it with boiling water or even use frozen. No matter which way you do it, make sure to drain off any excess liquid as that will make the casserole watery.
  3. Add the cooked cauliflower, cream cheese and ½ cup of cheddar cheese to a high speed blender and blend until smooth and creamy. If it's too thick add a tablespoon of 2 of water. It should be thick and creamy though.
  4. Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 15-20 minutes until browned well on the top.

    Easy and so genius! I used frozen steam in bag cauliflower and broccoli. I squeezed out the water really well, added some sour cream to the blender to thin out the cauliflower mixture. Mixed everything together and 15 mins at 400 and viola! This is a keeper!

    I steamed my fresh cauliflower in Microwave safe dish and pressed it out in a colander and cheese cloth.
    I brought fresh broccoli barely to a boil just till it turned bright green, drained pressed out in separate small colander
    I chopped up Deli Ham off Bone I had to use up, used Cheddar and Colby and Parmesan I had just about a TBL of cream cheese whipped in container to use up I just let it bake and had no water its delicious!

      I’m sorry that it was so watery for you. All I can think if is there might have been extra water if you used frozen broccoli? If the water just pooled at the bottom, you could just pour it off. Usually the cauliflower cream is rather thick. I’ll try to remake this this week as I just made a ham on Saturday. I’ll see if I can figure it.

      Hi Barb, I just remade this recipe and updated the post. I used fresh broccoli and cauliflower. I steamed them in the microwave. I had no problems with excess water. I’m thinking if you used frozen vegetables that must be the issue. I hope that helps a bit!
