Ingredients

  • 1 lb spaghetti pasta
  • 4 c chopped spinach
  • 1/2 head cauliflower (about 1 pound),
  • Salt and pepper
  • 2 cloves garlic, minced
  • 1/2 c unsweetened plain nondairy milk
  • 1 tsp miso paste
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • 1/3 c minced fresh parsley

Instructions

  1. This recipe is an absolute killer, bound to become a family favorite. I swear, once you’ve tried it once, you’re going to want to make it all the time.
  2. To make it, all you need to do is fill a pot with water, bring it to the boil, and pop in the pasta for 10 minutes.
  3. Whilst it cooks, bring another pot of water to the boil. Throw in a pinch of salt and the cauliflower, and then let it simmer for five to seven minutes, until the cauliflower is tender. Drain the cauliflower and pop in a blender.
  4. Add in the milk, garlic, lemon juice, olive oil, miso, and 1/8 teaspoon salt to the blender, and then run it until the sauce is creamy. Taste and adjust as you see fit.
  5. By now, the pasta would have cooked, so drain the water and throw it into a bowl with the spinach. Give it a toss.
  6. Pour the cauliflower mix into the pot and set over a low heat, adding in the pasta and spinach. Mix it around, top it with parsley, salt, and pepper to taste, and you’ve finished!
  7. Bam, your new favorite recipe is ready to devour.
